Easy to Make Condo Meals for Your Next Keystone Ski Vacation
One of the great things about a ski vacation at Keystone is the option to stay at a vacation condo or rental home instead of just a standard hotel room. You'll typically have much more space, multiple rooms and the best part.. a kitchen! Having a kitchen allows you to save money by not having to eat out at every meal. You can also save time, which you'll be thankful for in the morning on a powder day, when every minute counts in the race to fresh tracks! You'll also be happy to have the option to stay in on those nights when you are just too exhausted from a long day on the slopes to go anywhere! Here are a few meal ideas that can be super simple and quick that don't require having a ton of ingredients on hand. When grocery shopping, purchase items that can be used in multiple recipes, such as tortillas, shredded cheese, hamburger meat, pre-made guacamole, salsa and more.

Simple Spaghetti with Meat (Or Veggie) Sauce
Pasta dishes can be one of the simplest meals to prepare and one of the most satisfying after a long day on the ski slopes. Pickup your favorite noodles, spaghetti sauce, a pound of hamburger meat and/or veggies such as mushrooms, onions or zucchini for veggie lovers. Toss in a baguette, butter, garlic salt to make some quick and delicious garlic bread. You'll have a hearty dinner on the table in 15 minutes.
Tacos
Tacos are fun and can be super simple or you can decide to do them a little different, with tons of options. The classic beef taco with lettuce, tomatoes and shredded cheese is the perfect go-to. Jazz things up with some pre-made guacamole, black olives, salsa, hot sauce, onions or sour cream. Make them vegetarian by leaving out the ground beef and instead roasting cauliflower dusted with taco seasoning or just go with avocados, cabbage and other veggies. Kids will love being able to customize their meal and everyone will be happy with this easy and tasty dinner!
Breakfast Burritos
Make a big batch of these on your arrival night and you'll have breakfast ready for the whole week. Use your leftover taco tortillas and then throw in some scrambled eggs, bacon, green peppers or onions, garlic salt, pepper, shredded cheddar cheese and some pre-cut hash browns. Microwave or pan fry them in the morning, top with salsa and go!
Chicken Stir Fry
Purchase a stir fry veggie kit in the produce section, with pre-cut veggies such as asparagus, peppers and onions. Then get a pack of chicken, a bottle of teriyaki sauce, and a box of quick-cook brown rice. Throw everything in a skillet and microwave the rice and before you know it, supper is served!
Chili
Another simple meal, with various types of canned beans, diced tomatoes, a diced onion, ground beef and a packet of chili seasoning. Make it unique by adding canned corn, black olives, or a diced red or green pepper or jalapeno. Don't forget the toppings! Top with fritos corn chips, fried onions, and use your leftover shredded cheddar, sour cream, and guacamole!
